I am able to update my list throughout the week and have it delivered right to my door! It also personally helps to keep me on my budget too. Most recently, instead of spending time grocery shopping over going to the pool with my girls, I ordered on the app to have it delivered when we got home! I got to enjoy a pool day with my family and still meal prep and prepare for the week ahead!

This week I wanted to share one of my favorite recipes that is FULL of flavor ... JAMBALAYA! I got all my ingredients from GIANT! It's one of those meals where when you walk into the house you can smell it. I will warn you, if you don't like a lot of kick and spice in your food, don't use much cajun seasoning! I did 1 1/2 tbs and it was perfect for me and my husband. Give it a try and let me know what you think! You can email me anytime at christacooper@iheartmedia.com

Ingredients

1 lb chicken or turkey sausage, thinly sliced

2 large bell peppers, diced

1/2 large onion, diced

1/2 cup celery, diced

3 cloves garlic, minced

1 lb large raw shrimp, peeled and deveined (thawed or frozen)

2 cups cauliflower rice (fresh or frozen)

1 14oz can diced tomatoes, drained

1/3 cup low or no sodium chicken broth

1-2 tbs Cajun seasoning

Salt to taste

Optional garnish: green onions, fresh parsley

Directions

  1. In a large pot simmer 1/4 cup of water with bell peppers, onions, and celery. Cook for 5-8 minutes, stirring often, until vegetables are soft.
  2. Add sliced sausage and cook for 5 minutes or until browned.
  3. Make a well in the center and add the minced garlic. Let sizzle for 30 seconds, until fragrant, then stir in with everything else.
  4. Add cauliflower rice, diced tomatoes, chicken broth, and Cajun seasoning. Stir together, then add the shrimp. Increase heat to high to bring to a simmer, then continue to simmer uncovered, stirring occasionally until the cauliflower is tender, shrimp is cooked through, and liquid is reduced about 5-7 minutes.
  5. Season with salt to taste and garnish with green onions and parsley, if desired.
