Christa's Cookbook - Sausage Tortellini Soup

I am back this week to share a fan favorite recipe in my house ... drum roll please ... it's my Sausage Tortellini Soup!

I have been making this soup for a couple years now but my daughter's have never tried it! This is a delicious addition to your cookbook for an easy crockpot soup, whether you have it for your family on a cold winter day or if you need to bring a dish to a party! This soup has always been a hit whenever I make it.

With the cold weather we were having, I knew I needed to make this soup again. My daughter Caroline wanted to help! I never wanted to learn to cook when I was a kid, my mom would ask me and I was NEVER interested! It's taken me til now, my late 30's, to finally enjoy being in the kitchen and trying new recipes. When Caroline said she wanted to help me cook, I took advantage of that special moment and we got to work. She helped me with every step and worked up the courage to try it for dinner! I should note, I made this for my family over the holidays and my nieces and nephews tried it and loved it! My siblings asked for the recipe and went home and have made it for their families.

Ingredients:

20 oz package of cheese tortellini

1 lb ground sausage, browned

2 32 oz Chicken Broth

1 10 oz Condensed Tomato Soup

1 cup grated carrots

2 cups Fresh packed spinach (feel free to add a little more)

1 8 oz package of cream cheese

1 tbsp. Italian seasoning

1 tbsp. Mrs. Dash Tomato Basil Garlic

1 tsp. granulated garlic

Instructions:

Brown and drain the sausage

Add browned sausage to crockpot

Add all other ingredients except the tortellini

Stir a couple times while cooking to combine the cream cheese

Add tortellini the last hour

Cook on high for 3 1/2 hours or low for 5-6 hours
